Cooked rice bread is moist, soft, spongy and slightly sweet, quite similar to Potato bread. It is simple and hassle-free to make although the dough is a little sticky. It is excellent for toast.
With the amount of rice eaten in most homes, there is bound to be leftover rice from time to time. Instead of reheating your rice and serving it the same way, add variety to what you eat by making a whole new dish out of the leftover.
Why bother with making rice bread? With homemade rice bread, you control the ingredients and eliminate some additives and preservatives used in commercial baking.
This recipe is adaptable to savoury flavours so you can also make savoury rice bread with it. I love the savoury bread because it brings out the creative juices in you. You can add your favourite herbs, spices and condiments e.g thyme, rosemary, caramelized onions, basil, Scent leaf (nchaunwu), orange zest, sun-dried tomatoes etc. I sprinkled mine with a little sea salt.
I like to add a little colour to my Savoury bread so I use turmeric. It is lovely with Oxtail pepper soup, Mushroom pepper soup, Mushroom soup etc.
To make Rice Bread using cooked rice
1 1/2 cups cold cooked rice
1/3 cup powdered milk
1 cup water
4 tablespoons sugar
2 tablespoons butter or vegetable oil
2 teaspoons salt
3 cups plain flour
2 teaspoons active dry yeast
1 egg
For Savoury Rice bread
2 cloves garlic
1/4 teaspoon crushed dry rosemary
1 teaspoon turmeric powder.
Cook rice a little further to soften.
Using a fork or potato masher, mash cooked rice a little.
In a saucepan warm milk, water, sugar, butter or vegetable oil and salt to lukewarm.
In a bowl, stir together yeast and 1 cup flour.
Pour in milk and beat well.
Add egg and rice, mix well. Also, add seasoning and spices if you are making Savoury rice bread.
Add the remaining 2 cups of flour little by little. You will get sticky dough.
Knead the dough for 10 mins.
Place dough in a greased bowl, cover and leave to rise in a warm place for 1 hour until double in size.
Grease two bread pans and set aside.
knock down your dough and divide it into two.
Place in bread pans, cover and leave to rest 45 to 60 minutes.
Meanwhile, 15 minutes to the end, preheat the oven to 205 deg. C
Bake for 30mins.
Bread should sound hollow. Take out of the oven and grease immediately with butter.
Notes
- You do not have to mash your rice, you can leave it whole.
- If your rice is too wet, your dough might be too sticky and difficult to handle, just increase the amount of flour slightly.
- Flavourful rice like basmati, jasmine, brown rice will add more flavour to your bread.
- You can even use a mix of different types of rice.

This is a wonderful bread recipe. This bread is fluffy-soft and it makes wonderful toast. I cut the recipe in half so I skipped the egg which wasn’t a problem. Great, great bread!!
