Nigerian Barbecue Rice, Easy

Nigerian barbecue rice is another rich and delicious rice dish from Nigeria. It is a simple dish with a lot of flavour, perfect as a party dish. When everyone is expecting the usual jollof rice and fried rice, surprise them with this awesome dish.

This is barbecue-flavoured rice with colourful healthy vegetables you will love. Besides Jollof and Fried Rice, other rice dishes have started showing up at Nigerian parties, such as Asun rice, Nigerian Dirty Rice, Okpehe Rice, and barbecue rice. Nigerians love having a wide selection of dishes on their party menus and this usually calls for innovation and appropriation.

Nigerian barbecue rice is the perfect side dish for any barbecue, party or potluck. It is relatively simple to make with everyday ingredients, including the star ingredient, barbecue sauce. Use a barbecue sauce that is not overly sweet because you want your rice dish to taste savoury and not sweet like a dessert.

If you have a good barbecue recipe, you can make it up and use it, if not, use a store-bought sauce. This dish pairs well with barbecue meat.

How to make Nigerian Barbecue Rice

3 cups Rice
500g Beef
6 Tablespoons Vegetable oil
1 medium Onion (Sliced)
4 cloves Garlic (crushed)
Ginger (minced)
1/2 Cup Barbecue Sauce
3 Tablespoons Soy Sauce
1 teaspoon Dry chilli pepper powder
6 Stock Cubes
4 medium Carrots
1 small Green Bell Pepper
1 small Red Bell Pepper
1 small Yellow Bell Pepper

Rinse rice in several changes of water to remove surface starch. Set aside.

Thinly slice beef and season with salt

Place a pot over medium heat and add 2 tablespoons of oil.

When hot, add beef and stir-fry for 2 minutes.

Pour in the rice and mix well.

Add enough water to cover it, add two seasoning cubes and salt, and stir.

Cook until the rice is done.

Meanwhile, Peel, wash and cut carrots into strips.

Wash and remove seeds and veins from bell peppers. Cut into strips similar to carrots.

Place a wok or saucepan on medium-high heat; when hot, add three tablespoons of vegetable oil.

Add onions and carrot strips and fry for 2 minutes.

Add pepper strips, garlic and ginger and fry for one minute until the garlic is fragrant.

If using shrimp, add and fry for 2 minutes.

Drain and set aside.

Put Nigerian Barbecue Rice Together

Place a clean, dry wok or saucepan over medium heat.

When hot, add 2 tablespoons vegetable oil.

Pour in the barbecue sauce, soy sauce, dry chilli powder and seasoning cube or powder.

Fry for one minute. Be careful so it does not burn.

Pour in the rice and stir well to coat the rice.

Taste and correct seasoning.

Add the fried carrots and peppers.

Notes

  • Be careful when frying the barbecue sauce because it burns easily.
  • Do not overcook your rice so that it won’t get all mushy after mixing in the barbecue sauce.
