This vegetable rice is a dish I made on the fly. Not wanting to serve my white rice and stew with slaw, I decided to incorporate the slaw in the rice which eliminates the mayo or other dressing, meaning fewer calories. It is packed full of nutrients and pretty.
Rice is a staple in my home. It is my go-to food ingredient when I’m lost for what to cook, in a hurry, busy, low on groceries or countless other reasons. Healthy vegetable rice is an excellent way to hide vegetables from children and even adults who don’t like veggies. Also if you need to increase your vegetable intake, this is perfect. Similar to my cabbage rice made with leftover rice, this is a lovely way to use up leftover rice and make a nutritious dish out of it.
You can vary the ratio of rice to vegetables depending on your taste or needs which makes it perfect for a diabetic or a weight watcher. You will need to cut and shred the vegetables finely in order to blend well with the rice.
Besides adding nutrients to the rice, the vegetables are there to also add flavour but you will still need a stew, sauce or soup to serve with the rice. I have a green leafy vegetable rice recipe that is also scrumptious.
To prepare Healthy vegetable rice
2 cups cooked rice 2 tablespoons vegetabe oil onions carrot cabbage salt (optional)
Finely chop onion and cabbage, grate the carrot.
Put vegetable oil in a frying pan over medium heat.
When hot, add chopped onions and shredded carrot, stir.
Cook until both have softened, do not allow to colour.
Add cabbage and salt, stir well. Don’t add salt if you used salt to cook your rice.
Cook until cabbage is soft.
Pour in rice and stir to coat well with the vegetables.
Cook for 2-3 minutes and take off the heat.
Serve with stew, sauce, soup etc.
