Green Tea Cake using Green teabags

Green tea cake is tender and moist, melting in the mouth with a herby taste. It tastes like you are eating cake and drinking tea in one mouthful, very delicious and satisfying.

This is an adaptation of the Matcha (green tea) cake. I love Matcha cake, matcha in bubble tea, matcha ice cream etc. Sometimes I feel it’s the beautiful, vibrant green colour it gives food that excites me but the flavour and aroma are also awesome.

Matcha is finely ground powder of green tea leaves, specially grown and processed and it is very expensive. So I decided to experiment with regular Green tea bags. The tea leaves were ground in my blender dry mill then sifted and I got my cheapskates ‘matcha’ powder. Did it work? It surely satisfied my craving for a matcha cake and was delicious. A coffee grinder will do a better job grinding the dry tea leaves but I’ve used mine to grind too many spices so didn’t want it to affect the taste of the tea.

The colour of this green tea cake is not as vibrant as a matcha cake because the tea leaves are processed differently. I normally use plain green tea bags to make my cake but this time I used an orange flavoured green tea I got from Son No.1’s house.

Green tea cake doesn’t need salt like a conventional cake. The green tea will round off the taste of the sugar.

To make Green Tea Cake using Green teabags

2 tablespoons Green tea powder
1/4 cup warm milk
1 1/4 cup Flour
1 tablespoon baking powder
4 eggs
1 cup sugar
1 teaspoon vanilla
3/4 cup vegetable oil

Grease cake tin and lightly dust with flour, shake off excess.

Preheat oven to 180 deg. C

Cut open tea bags and pour out the dry tea leaves into a coffee grinder or blender dry mill.

Grind to turn into powder. Sieve using a very fine sieve.

In a small bowl mix together warm milk and tea powder, stir well and set aside.

In another bowl sift together flour and baking powder, mix well and set aside.

Place eggs, sugar and vanilla in the bowl of your mixer or any clean bowl, beat until light and fluffy.

Add oil in a steady stream and beat on low speed or if mixing by hand, just continue beating.

Pour in milk and keep mixing.

Add flour and mix well. Scrape down the sides of your bowl.

Pour cake batter into the prepared tin.

Hit cake tin hard 4-5 times on a table to avoid large air bubbles forming inside the cooked cake.

Bake for 30-40 minutes until a skewer inserted into it comes out clean.

Green Tea Cake batter in a loaf tin

Place tin on a cooling rack to cool a bit then remove cake from tin to cool completely. Eat warm or cool.

Serve with Golden Rice milk, kunnu Aya (Tiger nut milk), Zobo, Sorrel drink, Easy Homemade Lemonade.

 

Notes

  • You can mix your green tea powder with the flour but mixing it with the milk gives a brighter colour.
