This Beef liver sauce is one of my family’s favourites, my children can eat it with practically everything, even on toast. It is easy and quick to make and the ingredients are pantry staples. It can be served as an accompaniment to rice, beans, toast, savoury french toast, potatoes, twice-cooked potatoes, pasta, chapati, noodles etc.
The sweetness of the caramelised onions really offsets the slightly bitter taste of beef liver.
To remove the ‘iron’ taste of beef liver
For those who just can’t stand the ‘iron’ taste of liver, soak in milk, lemon juice, diluted vinegar or anything slightly acidic, for 1/2 hour to 4 hours, depending on how much of the liver taste you want to get rid of. Remove from soaking liquid and rinse, then use for the recipe.
To cook Beef liver sauce
200g beef liver 1 medium sized onion 2 tablespoons vegetable oil 1/2 teaspoon crushed garlic 1/4 teaspoon dry rosemary 1/4 teaspoon dry thyme 1 small carrot (3 tablespoons chopped) 1 medium fresh tomato black pepper or dry chili powder 1-200g can of baked beans (1 cup) 1/4 cup of water 1 seasoning cube salt 1/2 cup shredded cabbage
Wash, peel and cut onions into slices.
Put 1 tablespoon of vegetable oil in a frying pan, and place over medium heat.
Add onions and stir to coat with oil.
Cover with a lid for a few minutes so the onions will release its juices.
Then open and reduce the heat, stir from time to time.
When the onion has softened and turned golden, scoop it out and set aside.
Do not skip this step, it adds to the depth of flavour in the dish.
Meanwhile, cut liver into cubes, crush garlic and chop carrots and tomato, and set aside.
Add 1 tablespoon vegetable oil to the frying pan, when hot, add chopped liver and fry for 1 minute till it browns.
Sprinkle garlic, rosemary and thyme, continue frying, until you can smell the spices.
Add carrot and tomato, stir in black pepper, baked beans, water, seasoning cube, salt, cabbage and onions.
Cook until water has reduced, about 1 minute then take off the heat and serve.

Great tip on how to remove the iron taste of liver. Haha I’m used to pork or chicken liver ,but at least now 8 know what to do in case we have beef liver.

Even though I am not so much close to being a chef, or at least the person who claims to know how to cook, I think I would manage just fine at making this Beef liver sauce. Caramelized onions are something I often like to make with beans and I must try that soaking live into milk definitely makes liver taste better.
