Rinse rice in several changes of water to remove surface starch. Set aside.
Thinly slice beef and season with salt
Place a pot over medium heat and add 2 tablespoons of oil. When hot, add beef and stirfry for 2 minutes.the beef
Pour in the rice and mix well. Add enough water to cover it, add two seasoning cubes and salt, and stir. Cook until rice is done.
Meanwhile, Peel, wash and cut carrots into strips.
Wash and remove seeds and veins from bell peppers. Cut into strips similar to carrots.
Place a wok or saucepan on medium-high heat; when hot, add three tablespoons of vegetable oil. Add onions and carrot strips and fry for 2 minutes.
Add pepper strips, garlic and ginger, and fry for one minute until the garlic is fragrant.If using shrimp, add and fry for 2 minutes. Drain and set aside.
Place a clean, dry wok or saucepan over medium heat. When hot, add 2 tablespoons vegetable oil.
Pour in the barbecue sauce, soy sauce, dry chilli powder and seasoning cube or powder. Fry for one minute. Be careful so it does not burn.
Pour in the rice and stir well to coat the rice. Taste and correct seasoning.
Add the fried carrots and peppers.
Stir well and serve with the protein of choice
