Simple curry sauce might be the simplest and easiest curry sauce you have ever made. This is my go-to curry sauce when I am very busy or tired, yet my children love it so much. It is just perfect for a busy Mom or mid-week dinner.
It has few ingredients with few steps. Although it is simple, this sauce is full of flavour and is very comforting. The taste and spice level of this dish will vary a bit depending on the type of curry powder you use. You can use any curry powder of your choice so long as you like the flavour of the blend also, remember that some curry powders are really hot (spicy).
I used green beans here instead of fresh peas because that is what I had at home. Also, the boiled egg is optional but we always add it to our Simple curry sauce, my mother also did.
To prepare Simple Curry Sauce
1/2 kg beef 4 tablespoons Vegetable oil 1 medium onion 2 garlic cloves 1 inch root ginger 2 tablespoons curry powder 2 seasoning cubes 2 medium carrots 1 medium green pepper 2 eggs some green peas 1 tablespoon cornflour
Wash meat cut into small lumps, season with 1 teaspoon curry powder, salt and seasoning cube.
Chop onion, crush garlic, grate or finely chop the ginger.
Wash and chop carrots, green pepper and green beans.
Boil the eggs, peel and set aside.
Mix cornflour with 2 tablespoons water and set aside.
In a dry pot, add vegetable oil and place over medium-high heat, when hot, add beef and fry until browned.
Remove from pan and set aside.
Reduce heat to medium-low and add onions, gently fry until lightly browned.
Add garlic and ginger, stir around.
Add curry powder and fry for about 2 minutes.
Pour in 2 cups of water, seasoning cubes and the fried beef.
Cover and cook until beef is soft.
Add carrots, green pepper, boiled eggs and some green beans, leave to cook a few minutes.
Stir in the cornstarch slurry and cook a further 2 minutes, take off the heat.
Do not cover at this stage.
Serve with rice, naan bread, chapati, potatoes etc.
