Awara cabbage salad (Tofu Cabbage Salad) is a quick and easy salad made with a few everyday ingredients. It is healthy, delicious, and a simple versatile side dish similar to coleslaw. Awara cabbage salad can be served as a main dish along with shrimp, chicken, fish, steak etc.
It is made with blanched cabbage and well seasoned fried or baked Awara (beske). It is perfect for vegetarians, vegans, weight watchers, health-conscious individuals etc. Awara cabbage salad is excellent for barbeques, picnics, iftar, parties or just as your regular everyday meal. This dish on its own is packed full of nutrients and low in calories.
Fresh Awara is soft and almost white in colour. It is high in protein and iron but low in fat and also has a low-calorie count. In this salad, Awara is like croutons in Caesar’s salad.
Blanching the cabbage with boiling water and salt helps soften and sweeten it without the cabbage losing all its crunchiness. This sweetness helps elevate this salad. To make this salad even quicker, finely shred your cabbage and carrot then store them in zipper bags in the refrigerator along with your Awara (tofu) which should be stored in the freezer.

To Prepare Awara cabbage salad (Tofu Cabbage Salad)
Awara (Tofu) Ginger Garlic powder Cabbage Carrot Onions Red Pepper Green pepper seasoning cube (optional) Vegetable oil
Cut Awara to bite size, place on a tray then using a kitchen napkin, gently press out as much water as possible.
Season with salt, some ginger and garlic powder, cover and set aside.
Wash the Cabbage, Carrot, onions, green and red peppers. Thinly Shred cabbage and carrot, deseed the peppers and slice and set aside.
Set two bowls on the table, fill one with hot water and the other with ice cold water.
Place shredded cabbage in the bowl of hot water and add some salt. Leave to stand 30 seconds and drain.
Immediately pour cabbage into the ice-cold water, drain and set aside.
Place a frying pan over medium-high heat, and add enough vegetable oil to shallow fry Awara (Tofu).
When hot add Awara and fry until browned on all sides, drain and leave to cool.
On a platter, spread cabbage, red and green peppers and onions. (Drizzle any oil of choice, e.g vegetable oil, olive oil or any delicious oil and sprinkle seasoning cube on top, this is optional).
Spread fried or baked Awara on top of your salad. Sprinkle with Yaji (Suya spice).
Serve on its own, with bread, sinasir, semolina flatbread, Pita bread, Chapati etc.
